The abbey beer Steenbrugge Wit-Blanche is a wheat beer brewed with 40% unmalted wheat and 60% malt. It has a refreshing taste and a fruity, slightly smoked fermentation aroma in combination with the subtle Bruges herb mixture 'gruut', with an emphasis on coriander and curaçao. Beer of high fermentation with secondary fermentation in the bottle. Steenbrugge Wit-Blanche is fermented with its own Steenbrugge yeast strain of high fermentation, which gives a phenolic smoked aroma together with a perceptible fruitiness. STeenBRuGGe Wit-Blanche undergoes a second fermentation in the bottle. During the filling a quantity of sugar and yeast is added which in the 'warm room' is fermented to alcohol and carbon dioxide. That is why the beers in the bottle have a slightly higher alcohol level than the same beer in the barrel. The fermentation on the bottom of the bottle protects the beer against oxidation and thus against rapid aging of the taste.
